Cooking with children: tricolor watermelon poles

Watermelon, summer fruit, popsicles, the favorite food for everyone in summer. The watermelon poles: the perfect combination! Today I found these fun watermelon poles made with a jelly base and a soft creamy cheese center.

We can prepare these ice creams with our children in the morning and freeze them for when we return from the beach. It is a very simple recipe to prepare with children and fun, with a little dexterity and following the times of cooling and freezing, we will get to have a tricolor ice cream that will look like watermelons, with its seeds and everything.

Ingredients

  • 1 cup of sugar
  • 90 grams of lime jelly (green)
  • 2 cups of boiling water
  • Ice cubes
  • 1 cup of cold water
  • 90 grams of strawberry jelly (red)
  • 3 tablespoons chocolate chips
  • 100 g Philadelphia cream cheese
  • 1-1 / 2 cups whipped cream
  • 16 paper cups

Preparation

  1. Mix 1/3 cup of sugar and lime jelly in a medium bowl.
  2. Add 1 cup of boiling water (this step should be done by an adult) and let the child mix with some rods for about two minutes until it is completely dissolved. Add enough ice to 1/2 cup of water until it reaches 3/4 cup. We add it to the file and continue mixing until it is completely undone. We put it in the fridge for 25 minutes.
  3. Meanwhile, we repeat step 1 using strawberry jelly, without putting the mixture in the fridge. We put this red mixture in 16 paper cups. We put them in the freezer for 20 minutes and then add 1/2 teaspoon of chocolate chips in each glass and stir.
  4. We beat the cream cheese together with the remaining sugar with the mixer at medium speed until it is very creamy. We put the mixture on the gelatin and add it to the glasses with the red gelatin.
  5. We pour the jelly of lime on the cream of cheese and we introduce a stick of wooden poles in the center of each glass. We freeze for a minimum of 3 hours. Before serving we can pass the glass under the hot water tap so that they can more easily separate from the glasses.
