Healthy dinners for children: potato, onion and tomato omelette

The ingredients What we need are: potatoes, onion, tomatoes (we have chosen the cherry variety for its flavor), eggs, oil and salt. The elaboration It has no secret is quick and simple. Peel the potatoes and wash them well, cut them very thin so that they are done soon, then chop the onion very small, add the salt and taste it raw so that it is not salty.

In a pan add very little oil and put it on a very low or low heat add the potato and onion and move so that it does not stick or burn (although if the fire is low it does not burn). Once the potato and the onion is tender and soft, we will separate it to a source by draining the excess oil, if we have put it little it will not be necessary.

To peel the cherry tomatoes we put water to boil and when it does we remove it from the heat and put in it no more than 10 seconds the cherry tomatoes, we take them out and put them back in another pot with cold water to cut the cooking we take them out and We can already peel them easily, once peeled we chop them into small squares and reserve.

In a bowl we put the eggs and beat them until they foam, so it will be fluffy, we throw the potato, onion, tomatoes and mix well.

In a pan with hardly any oil when it is very hot, we pour everything and make it to the point so that it is not dry, we place and ready to eat.

If children do not like tomatoes in this way we can make them with a separate oil splash to accompany the tortilla.
